Easy Homemade Organic Vegetable Soup

2 T. Spectrum Organic Canola Oil
2 c. diced Organic Onion
1 c. diced Organic Carrot (about 2 carrots)
2 c. diced Organic Potato (cut in 1/4"-1/2" cubes)
8 c. water
2 Rapunzel Organic Bouillon Cubes
1 t. Frontier Organic Garlic Granules or Powder
1 1/2 t. Frontier Organic Rosemary (crushed or ground finely)
1 14.5 oz. can Westbrae Organic Corn
1 14.5 oz. can Westbrae Organic Green Beans
1 14.5 oz. can Westbrae Organic Sweet Peas
1 28 oz. can Muir Glen Organic Ground Peeled Tomatoes
1/4 t. salt (or to taste)
1/4 t. freshly ground Frontier Organic Peppercorns or Frontier Organic Ground Black Pepper

In a very large soup pot, saute onion in oil until translucent.
Add carrots and saute a couple more minutes.
Add water and bring to a boil.
Add potatoes, bouillon cubes, garlic granules and rosemary.
Reduce heat and simmer about 5 minutes taking care not to over cook the potatoes.
Add canned vegetables and tomatoes (juice and all) and the salt and pepper.
Simmer 10-15 minutes stirring often.

Serves: a bunch... makes a huge pot!
