Organic Tostadas

Bearitos Tostada Shells
1 can. Amy's Refried Beans
Homemade Organic Salsa or Muir Glen Organic Salsa
1-2 Organic Spring Onions (chopped)
1 Large Organic Tomato (Chopped)
Organic Lettuce
Organic Guacamole

Warm tostada shells under the broiler for a minute or two to make them crispy - taking care not to burn them!
Put a little water (about 2 T.) in a saucepan and add beans.
Cook refried beans for several minutes until heated through, adding more water if necessary.
Spread refried beans on tostada shell.
Then layer salsa, spring onion, tomatoes and lettuce.
Top with guacamole.

Serve with a side of Organic Dirty Mexican Rice or Seeds of Change Organic Seven Grain Pilaf.
