Organic Sloppy Joes

1 c. dried Organic Textured Soy Protein
2-3 T. Spectrum Organic Canola Oil
1 small organic green pepper (about 1 c. diced)
1 small organic onion (about 1 c. diced)
1 organic carrot (about 1/2 c. diced)
1 1/2 T. Spectrum Organic Red Wine Vinegar
1 T. Shady Maple Farms Organic Maple Syrup
1/2 28 oz. can Muir Glen Organic Tomato Puree
2 t. Frontier Organic Garlic Granules
1 T. Organic Chili Powder
1/2 t. Frontier Sea Salt


Soak the textured vegetable protein according to directions.
Meanwhile dice the vegetables.
In a good quality non-stick pan sautee vegetables in 2 T. canola oil until onions are translucent (about 5 minutes).
Drain the textured vegetable protein and add to the sauteed vegetables.
Cook until browned (about 10 minutes) over medium-high heat adding more oil if necessary and stirring occasionally.
Reduce heat to simmer.
Add spices and salt and cook briefly, stirring.
Add 1/2 can of tomato puree, maple syrup and vinegar.
Stir well and simmer for a couple of minutes.

Serve on a whole grain bun.

Yields about 6 sandwiches, depending on size.
