Organic Southern Gumbo

4 c. Organic Okra (sliced 1/2" thick) (about 30 pieces)
2 c. Organic Onions (diced)
1 c. Organic Carrots (diced)
1 T. Spectrum Organic Canola Oil
1 t. Salt (or to taste)
4 t. Frontier Organic Dried Basil
1/8 t. Frontier Organic Cayenne Pepper
2 c. Water
1 28 oz. can Muir Glen Organic Ground Tomatoes
2 1/2 T. Shady Maple Farms Organic Maple Syrup
1 c. uncooked Lundberg Organic Brown Rice (cooked according to directions - about 2c. cooked)

Saute onion and carrot until onion is translucent.
Add salt, basil and cayenne and cook briefly (about 30 seconds).
Add okra and water and bring to a boil.
Reduce heat and simmer until okra is tender (about 10 minutes).
Add tomatoes and maple syrup.
Simmer another 5-10 minutes.
Adjust seasonings.

Serve over rice with a spoon and piping hot cornbread.
Serves 4-6
